Baked Cod with Chorizo Sausage

Ingredients:

  • 500 g fresh cod fillet, cut into four pieces
  • 250 g roughly chopped Chorizo sausage
  • 1 small onion, thinly sliced
  • 1 can navy beans (398 mL)
  • 1 can Aylmer® Accents® Italian tomatoes (540 mL

Directions:

  1. Place cod fillets in a shallow baking dish and bake at 425ºF for 20 minutes.
  2. While fish is baking, chop Chorizo sausage and sauté with onion for 5 minutes or until tender.
  3. Add white beans and Aylmer® Accents® Italian tomatoes and pour over fish.
  4. Serve with sliced lemon.
