Aylmer® Accents® Original Petite Cut Tomatoes

Ingredients:

  • 1 can (540 mL) Aylmer® Accents® Original Petite Cut Tomatoes, drained
  • 8 cups (2 L) chopped romaine lettuce hearts
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 cup (250 mL) diced English cucumbers
  • 1/4 cup (60 mL) finely diced red onion
  • Red Wine Jalapeño Vinaigrette:
  • 2 tbsp (30 mL) red wine vinegar
  • 1 tbsp (15 mL) minced jalapeño pepper
  • 1/2 tsp (2 mL) honey
  • 1/2 tsp (2 mL) Dijon mustard
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1/4 tsp (1 mL) salt and pepper
  • 1/3 cup (75 mL) extra-virgin olive oil

Directions:

  1. Red Wine Jalapeño Vinaigrette: Whisk together red wine vinegar, jalapeño, honey, mustard, shallot, garlic, salt and pepper; slowly whisk in olive oil.
  2. Toss together tomatoes, lettuce, red and green peppers, cucumbers and red onion; transfer to serving platter.
  3. Drizzle vinaigrette over top; toss gently to coat.

Recipe Tips:

  1. Add garlic croutons to salad and sprinkle with Romano cheese if desired.
