Aylmer® Accents® Garlic & Olive Oil

+ Cucumber + Green Pepper + Onion + Parsley + Cilantro

Ingredients:

  • 1 can Aylmer® Accents® Petite Cut Tomatoes with Garlic & Olive Oil (540 mL)
  • 1/2 cup English cucumber, finely diced
  • 1/2 sweet green pepper, finely diced
  • 2 tbsp minced red or Spanish onion
  • 1 tbsp fresh parsley, minced
  • 1 tbsp cilantro, minced
  • 1 cup water, or tomato or vegetable juice
  • 1 tbsp red wine vinegar
  • Dash of hot pepper sauce
  • Croutons

Directions:

  1. Combine tomatoes, cucumber, green pepper, onion, herbs, water and vinegar in large bowl.
  2. Season with salt and pepper, add hot pepper sauce.
  3. Stir well. Refrigerate for at least one hour.
  4. Serve cold, topped with croutons.
