Italian Beef Stuffed Potatoes

+ Main + Potato + Beef + Chicken + Onion + Garlic + Zucchini + Cheese

Ingredients:

  • 4 large baking potatoes, scrubbed
  • 350g lean ground beef, chicken or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can Aylmer® Accents® Italian Stewed Tomatoes (540 mL)
  • 1 medium zucchini, chopped
  • 1/2 cup shredded mozzarella cheese

Directions:

  1. Pierce potatoes with fork and microwave on high for 12 minutes or until tender.
  2. Wrap in foil to keep warm. Brown meat with onion and garlic then drain fat.
  3. Stir in tomatoes and zucchini. Bring to a boil then reduce heat and simmer 10 minutes.
  4. Slice potatoes in half, lightly mash centres and top with tomato mixture.
  5. Sprinkle with cheese and serve immediately.
