Italian Beef Stuffed Potatoes

+ Main + Potato + Beef + Chicken + Onion + Garlic + Zucchini + Cheese
- 4 large baking potatoes, scrubbed
- 350g lean ground beef, chicken or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can Aylmer® Accents® Italian Stewed Tomatoes (540 mL)
- 1 medium zucchini, chopped
- 1/2 cup shredded mozzarella cheese
- Pierce potatoes with fork and microwave on high for 12 minutes or until tender.
- Wrap in foil to keep warm. Brown meat with onion and garlic then drain fat.
- Stir in tomatoes and zucchini. Bring to a boil then reduce heat and simmer 10 minutes.
- Slice potatoes in half, lightly mash centres and top with tomato mixture.
- Sprinkle with cheese and serve immediately.
