Tilapia with Tomatoes & Feta

Aylmer® Accents® Cracked Black Pepper & Roasted Garlic

+ Tilapia + Olive Oil + Olives + Feta Cheese

Ingredients:

  • 1 tbsp olive oil
  • 500g tilapia fillets (4 fillets
  • 1 can (540 mL) Aylmer® Accents® Cracked Black Pepper & Roasted Garlic Petite Cut Tomatoes
  • 1 tsp dried oregano (or Greek seasoning)
  • 1 tsp finely grated lemon zest
  • 1/4 cup sliced pitted Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 tbsp chopped parsley

Directions:

  1. Heat oil in large non-stick frypan; brown fish on both sides.
  2. Add tomatoes, oregano, and lemon zest. Simmer uncovered for 8 minutes.
  3. Top with olives and feta; heat 2 minutes. Sprinkle with parsley.
